So much is written about food these days, it is hard to imagine that our distant descendants would struggle to imagine how we ate, if they cared to find out. It seems curious that relatively little is documented about how our ancestors ate, until the end of the Middle Ages.

The food and cooking of Ancient Rome is fascinating – in part because all roads lead to Rome, but so do all avenues of intellectual pursuit. For Western culture at least, the Roman Empire is one of the pillars upon which our whole society, and much of our cuisine, is built.

This in now our fourth joint menu, and it is hard to describe the childish delight we took in researching, discussing, developing, and tasting the recipes in these pages. None of them can possibly be an accurate replication of the dishes they are supposed to represent, two millennia on – but they are delicious, fun, and hopefully provoke imagination of times long gone. It has been a pleasure for us to prepare the recipes for you, and we hope you will go on to recreate them in your own kitchen.
